In the wake of the Covid-19 Pandemic, food insecurity in minority communities across the state has increased. Families and individuals are now struggling with joblessness and the ability to keep a roof over their heads now face the challenge of putting food on the table.

But as they say, “necessity is the mother of all invention” and I had the opportunity to have a conversation with several individuals who have come up with innovative ways to help areas affected by food deserts and alleviate food insecurity in our local communities.
